1.面包粉、蛋糕粉、酵母、白糖、盐、牛奶同入面包桶中

2.启动和面程序,待面团光滑后,放入软化的黄油,继续揉面

3.待面团能够扯出大片薄膜时,可收圆入面包桶中进行基础发酵,内桶上盖一块湿布,以防面团表皮变干

4.等面团发至2.5倍大时,手指蘸面粉,在顶部戳洞,不塌陷不回缩

5.将面团取出,置于案上,排气后称重,分成20等份,揉园,松弛10分钟

6.此时可制作椰蓉馅:椰蓉、鸡蛋液、白糖、软化的黄油同入一碗

7.用勺子搅拌均匀

8.取一块小面团,擀成小圆饼,再取适量的椰蓉馅入其中

9.像包包子那样封口,捏严,收口朝下

10.将剩下的小面团依次完成,摆在不粘烤盘中,蒙上保鲜膜,于温暖湿润处进行二次发酵

11.待面团是原来的二倍大时,表面刷蛋液、撒白芝麻,烤箱开始预热180度

12.面包生坯入预热好的烤箱中层,180度,17分钟左右,表面上色过重可以加盖锡纸

小甜面包不必非要揉出手套膜,能扯出稍具透明的大薄片即可; 加入少量蛋糕粉可以使口感更加松软; 椰蓉馅可一次多做些,用不完可放冰箱冷冻保存,下次再用时可提前取出化冻。
